Recipe for Snow Ice Cream
For parents, snow days are the best but also the worst. I love having a day off with the kids, but the question instantly becomes how to keep the kids entertained for most of the day while they are stuck inside. Typically, this results in them hanging in their rooms playing games or watching YouTube. In order to prevent this, I usually plan for a perfect snow day filled with outdoor fun, crafts, and a movie night. One of our favorite traditions though is making snow ice cream!
I had never made this as a kid, but I stumbled across the idea on Pinterest long ago. I rarely anticipate us seeing any snow in the winter, but when we got a record amount a few years ago I knew this was the perfect idea for a snow day treat. This was actually really easy and amazingly tasty!
There are numerous recipes online, but I went for a combination of what I was finding essentially making up my own (it isn’t rocket science!). We decided to make two different batches – one vanilla ice cream and the other mint chocolate chip.
INGREDIENTS
1/2 c. Milk
1/3 c. Sugar
1 tsp. Vanilla Extract
Pinch of Salt
4 c. Fresh Snow
Toppings (Optional): Sprinkles, chocolate chips, caramel, chocolate syrup
*For mint ice cream, use 1/2 tsp. vanilla extract and 1/2 tsp. peppermint extract
INSTRUCTIONS
Whisk together all non-snow ingredients in a large bowl. Collect your snow and mix it all together. Add desired toppings and enjoy!
The kids absolutely love this one. I am frankly surprised at how much it tastes like real ice cream. It comes together easily with very few ingredients and can be adjusted based on what you like. My husband was hesitant to have this at first, but even he enjoyed it. Just be sure to eat it quickly as it will melt!
