Lasagna Soup Recipe

I love cooking, but when you’re pressed for time at the end of a work day and kids have to get to bed, I am always looking for something quick and easy to make.  When I was single, I rarely experimented with cooking anything new.  I had pasta probably a few times per week simply because it required hardly any effort. I now need to (quickly) cook enough for four people and it is a great bonus if there is enough leftovers for another night. One of my favorite one-pot recipes to make is lasagna soup!

INGREDIENTS

  • 1 lb. ground sausage
  • 1 yellow onion, diced
  • 1 tsp. dried rosemary
  • 1 tsp. dried thyme
  • 4-5 garlic cloves, minced
  • 1/2 tsp. red pepper flakes
  • 1 (24 oz.) jar pasta sauce
  • 6 c. chicken broth
  • 1 (14 oz.) can crushed tomatoes
  • 2 Tbsp. tomato paste
  • 2 tsp. balsamic vinegar
  • 2 tsp. granulated sugar
  • 1 Tbsp. dried basil
  • 1 tsp. dried parsley
  • 1 tsp. dried oregano
  • 1 whole bay leaf
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 tsp. cinnamon
  • 1 box lasagna noodles, broken into 2-inch pieces
  • 1/2 c. heavy cream
  • Mozzarella Cheese, Parmesan Cheese, or Ricotta for garnish

INSTRUCTIONS

1. In one large dutch oven, sauté onions and brown sausage over medium-high heat.  Add in rosemary and thyme for extra flavor.  Once browned, add in garlic & red pepper flakes.

2. Dump in pasta sauce, chicken broth, crushed tomatoes, tomato paste, balsamic vinegar, sugar, and spices.  Break up your lasagna in about 2-inch pieces.  Bring soup to a boil and then reduce heat to simmer for about 25 minutes.

3. Remove bay leaf and add in heavy cream.

4. Garnish with cheeses of your choosing and serve with warm bread for dipping.  Enjoy!


This recipe is a household favorite because of how simple it is to make. I love that this is all made in one pot, because let’s face it – does anyone actually enjoy doing dishes? This has everything you love about lasagna, but doesn’t require the time to painstakingly layer each ingredient. I recommend getting one big dutch oven to easily cook it all in one pot. This one from Amazon is great because of its size and nonstick nature.

I recommend serving this with some bread or crescent rolls. Overall, this whole meal came together in about 30 minutes and I have more than enough leftovers for another night.
