Pumpkin Sausage Pasta

Ingredients
  

  • 1 lb. rigatoni or penne
  • 1 Tbsp. butter
  • 1 lb. ground sausage
  • 1 cup onion chopped
  • ½ tsp. red pepper flakes
  • 2 cloves garlic minced
  • 1 can pumpkin puree 14 oz.
  • 1 tsp. ground sage
  • ½ tsp. salt
  • ½ tsp. pepper
  • ¼ tsp. nutmeg
  • 1 cup heavy cream
  • ½ cup vegetable broth
  • 1 cup fresh spinach loosely chopped

Instructions
 

  • Cook pasta according to package; drain and set aside.
  • In large skillet, melt butter over medium-low heat. Add ground sausage and cook until no longer pink.
  • Mix in chopped onions and allow to soften. Add garlic cook for 30 seconds until fragrant.
  • Stir in spices, pumpkin puree, cream, and vegetable broth bringing it to a slight simmer.
  • Add in spinach and allow to wilt.
  • Combine cooked pasta with the pumpkin sauce.
