Pumpkin Tomato Soup

Ingredients
  

  • 2 Tbsp. butter
  • 1 medium onion chopped
  • 3 garlic cloves diced
  • 1 can crushed tomatoes 28 oz.
  • 1 can pumpkin puree 14 oz.
  • 2 cup chicken broth
  • 1 Tbsp. sugar
  • ½ tsp. cinnamon
  • ½ tsp. ground sage
  • ½ tsp. dried thyme
  • ¼ tsp. paprika
  • ¼ tsp. nutmeg
  • ½ tsp ground ginger
  • ¼ tsp all-spice
  • ½ tsp. cayenne pepper
  • ½ tsp. salt
  • ½ tsp. pepper
  • ½ cup heavy cream

Instructions
 

  • In a large skillet, melt butter over medium-low heat. Stir in chopped onions and allow to soften.
  • Add in garlic cloves and cook for 30 seconds until fragrant.
  • Stir in remaining ingredients except for the heavy cream and bring to a simmer.
  • Cook for 30 minutes. Use an immersion blender to blend until smooth.
  • Stir in heavy cream and serve with grilled cheese.
